This mushroom recipe is amazing! I will always cook them in a cast iron skillet! I highly recommend getting quality mushrooms at your local farmer's market! Picked up a variety of mushrooms from Union Square Farmer's Market in Manhattan the other day. Outstanding! Serve this over burrata! And PS, if you have a Whole Foods near you, they sell 1lb packs of "Chef's Mushrooms" that are perfect for this. A keeper, ‘cause it is simple and flavorful…. Served as a Thanksgiving side: they were gone in NO TIME!. Ran garlic through a press, right into the pan. Followed recipe almost exactly: a well seasoned large skillet (12+ inches diameter) worked best.Ĭremini and white button mushrooms halved, stems on, plus chanterelles, assorted oyster and a portobello cap sliced. I am adding this recipe to my arsenal of mushroom dishes! ![]() Served this dish with some fettucine pesto pasta. Also finished it off with fresh basil and thyme at the end along with salt pepper and a little smoked paprika. I added 4 cloves of garlic instead of the 2. At first I was hesitant about not putting any oil or seasoning on the mushrooms but they cooked up great. I always use my cast iron on the stove top. Yum, Yum! I had some sliced portabella and baby Bella mushrooms to use. Salt generously, pepper profusely, and signal the attack. Let sizzle in front of your drooling friends for three to five minutes. Final removal: add the garlic and parsley. ![]() Return to the oven for another five minutes. Remove the pan and add the shallots, butter, and toss. Then remove again, and stir the shrooms so that any sides unexposed to the hot iron can't help getting a good sear. Remove the pan and add all the mushrooms. Slice the portobello into quarters or eighths as desired. Rip the oyster mushrooms into halves by hand. Remove the bottom tuft of the king oyster mushrooms and discard, then slice lengthwise into four or five long pieces before cutting down the middle so you have short rectangles. Slice crimini and button mushrooms in half. If you must rinse them, do so gently and pat dry. Place your trusty cast-iron skillet in the middle of your oven and preheat to 500 degrees. ![]()
